SCHOOL LUNCH
SUCCESS STORY

The school administration and nutrition services at Central Montcalm Upper Elementary School wanted to decrease some of our fat levels without jeopardizing our student participation. We did not advertise the changes that we made with the students, but we began sharing our changes with a few parent groups at the beginning of the school year. Many parents were not aware that we have a large variety of fruits & vegetables offered at each building level.

The first year we changed to reduced calorie dressings and started researching the low-sugar cereals and offered a few no-sugar added cereals. We pushed all buildings to add fruits and vegetables at their salad bars. We stopped offering whole milk and continued with the 2% and 1% white, chocolate and skim milk. And we offered a grilled chicken item at the High School as an alternate choice.

The second year we changed from white breads to whole wheat hamburger and hot dog buns, and wheat crust pizza at the Middle School. We decreased the higher sugary type foods for breakfast and pushed for more hot breakfast entrees. We offered reduced calorie cheeses only (Bosco sticks) and mozzarella for pizzas and reduced calorie chips (Doritos) or baked for enriching the bread items. And we changed to Soy oil from Canola oil for deep fat frying at the High School.

The participation levels have increased from 61% to 64% this school year, which includes equivalent sales. I believe we are giving our students the ability to make healthier choices and in some cases exposure to new and different items.
