SCHOOL LUNCH
SUCCESS STORY


Our students are very pleased with changes made in both our breakfast and lunch menus here at KEC Mayfield Middle School. Our Coordinated School Health Team wanted to increase the amount of fresh vegetables and fruit eaten at both breakfast and lunch. As a result, we have instituted an enhanced salad bar with not only salad greens but darker greens such as spinach and green beans. In addition to carrots and celery, we have also added cucumbers to our salad bar. Our school cook has also gone the extra mile and is arranging our fruits and vegetables attractively. She cuts the veggies into smaller pieces and places our fruits in small containers which makes them easier to handle and more accessible to students as they go through the cafeteria line. Students have more variety and choice at the salad bar which is now served daily. Students are also able to enjoy a greater variety of fruit not only at lunch but at breakfast as well.

As a result of these changes our fruit and vegetable consumption has increased by 70% evidenced by the number of servings left compared to just three months ago. We attribute our success to our CSHT, our Food Service Staff, and our students for their support and willingness to try something new.
