SCHOOL BREAKFAST
SUCCESS STORY

We switched to all whole grain bread products two years ago and 1% milk five years ago. This year we introduced a "Junior Fruit and Yogurt Salad" as an option at lunch, which is extremely popular with the children. When we do serve pizza, which is about once per month, it has a whole grain crust and is a reduced-fat product. We use fresh and frozen, not canned, vegetables.

We serve all breakfasts as "grab-and-go" so that the children may take their sack breakfast to various locations before school, which increased breakfast participation by almost 50% in one year. Kindergarten classes eat lunch in their classrooms with the teacher, which offers an opportunity to have conversations about healthy food choices and table manners. Recess is before lunch.

Administrative and teacher support has enabled us to make these healthful changes at the building level.
